In this video I show you how to make a very simple but superbly tasty and flavourful tomato rice the Ugandan way. I added healthy pea aubergines (katukuma or thai green aubergines) which though somewhat bitter add a lovely contrasting flavour to the rice. You can enjoy is it as a one pot meal or as a side next to grilled meats and chicken, stews and curries, fried eggs or braised greens INGREDIENTS (serves 3-4) 1 ½ cups Super rice, washed 1 tbsp Sunflower oil 1 tbsp Butter 1 Onion, diced ½ Red bell pepper, chopped ½ cup Pea aubergines 3 Tomatoes, chopped 1 tbsp Curry paste ½ bundle Spring onions, thinly sliced 3 cups Water Salt to taste Enj😄y.
