In this video I share a vegetarian recipe from north western uganda. Traditionally, we would cook this creamy stew using just aubergines but here I changed things up a bit by stewing assorted vegetables for 10 minutes in a homemade stock seasoned with ginger and a stock cube. The stew is embellished simply with peanut butter and it result in a filling sauce that pairs fabulously well with sweet potatoes.
